Easy and luxurious Sacher slice

This delicious chocolate dessert was created by its founder Franz Sacher in 1832. It is a fantastic and classic recipe, which you can find in most of the known places throughout Austria, especially in Vienna or Salzburg. I’ve already provided you the classic Sacher torte. This time as an honour for my great-aunt who would turn 100 years old, I am going to create her very favourite one – Easy and luxurious Sacher slice.Sacher slice is suitable for kids from the age of 3. Good quality chocolate comes within a combination of roasted hazelnuts, almond flakes and spicy currant marmalade. So yummy! Total Time: 1 hour sacher slice

Shopping List

120g of butter, soft in cubes 160g of icing sugar, sifted 4 whole eggs, seperated 100g of melted chocolate, at least 50% 80g of roasted ground hazelnuts 60g semi-coarse flour, sifted A pinch of baking powder without phosphateFew tablespoons of spicy marmalade, I used black currant Almond flakes to decorate Whipped cream to serve with

Instructions

In a steam bath melt the chocolate. Give it a good stir and transfer into a cold bath. Set aside. Preheat the oven to 180 degrees. In a medium baking tray lined with some baking paper put hazelnuts and roast for about 5 minutes until golden. Let them cool down a bit and shake them in a colander to remove the skin. Afterwards, ground them in a mixer and set aside. In a large mixing bowl place butter and icing sugar. Mix on high speed until fluffy. Then, stir in the egg yolks, one at a time until incorporated. Afterwards, stir in the chocolate and give it a good mix. In a medium metal bowl whisk the egg whites until firm peaks. In a small mixing bowl place hazelnuts and flour with baking powder. In 2 bunches, stir in the flour mix and egg whites into the egg mixture. Turn over with a spatula and continue until it is all done. Mold into a lightly greased baking tray (I used 20x30cm) and bake for about 40 minutes. Take the slice out and let it cool down entirely.

Presentation

Layer the cake with a thin layer of spicy currant marmalade and sprinkle with almond flakes generously. Serve with a bit of sweetened whipped cream and slice into heaven. Makes 1 baking tray of 20x30cm. sacher slice sacher slice
