Luxurious Chocolate Bars

Seeking some inspiration for a birthday of your little one? Try out my new Luxurious Chocolate Bars, you cannot go wrong with them. To be perfectly honest, I made them this year for my boyfriend’s birthday and they vanished from the table, so good they are. The taste is very similar to Snickers and Twix chocolate bars.

The base is a very smooth vanilla cookie dough, layered with this awesome, milky and child like peanut sauce. I could have stopped it here already! However, I have topped it up with Chetna Makan’s easy caramel sauce and covered the bars in a dark chocolate topping. Decadent!

Luxurious Chocolate Bars are suitable for kids from the age of 3. Offer with an afternoon’s cup of milk and slice them into really small cubes. They go fast, trust me!

Shopping List

The Vanilla Cookie Dough::
225g of plain flour, sifted
1 teaspoon of baking powder without phosphate, sifted
60g caster superfine sugar
125g of butter, soft in cubes
1 teaspoon of vanilla extract
1 whole egg

The Cream Filling:
1 can of sweet condensed milk
125g of butter
100g of unsalted peanuts, hardly chopped

Chetna’s Caramel Sauce:
100g of caster superfine sugar
2 splashes of water
50g of butter
50ml of double cream

The Chocolate Topping:
80g of good quality dark chocolate (at least 70%)
1/2 cup of double cream

Instructions

Preheat the oven to 180 degrees.

The Vanilla Cookie Dough

First, place the flour with some baking powder into a large mixing bowl. Add sugar, salt and stir.

Next, butter, vanilla extract and 1 egg. Mix gently with a spatula and start kneading the dough with your hands into a smooth texture. Afterwards, mold it into a medium lightly greased baking tray (I used 25x35cm) and smoothen with your fingertips.

Bake in the oven for about 20-25 minutes until the edges are golden and you can smell the beauty. Take it out and let it cool down entirely.

Meanwhile, prepare the layers.

The Cream Filling

In a small deep pan put 1 can of sweet milk and butter on a medium heat. Let it melt and mix well with a spatula. Continue mixing until it starts darkening a bit. Then, add salted peanuts and take off the heat. Incorporate and taste. Set aside.

Chetna’s Caramel Sauce

Thereafter, take a small deep non sticking pan and place the sugar in on medium heat. Let it start working and add a bit of water at the time. Once the caramel starts melting, give it a stir and let it come to a beautiful golden colour.

Next, stir in the butter and continue mixing until you get a smooth texture, for about 2 minutes on medium heat. Then, pour in the double cream and mix. Take off the heat and let it cool down. Done.

Presentation

Once the cake has chilled enough, layer it with The Cream Filling generously. Smoothen with a sharp knife.

Afterwards, sprinkle with Chetna’s Caramel Sauce and let it cool down entirely in a cold place.

The Chocolate Topping

In a steam bath melt the chocolate and dissolve it in a bit of double cream, not too much at once. Once the chocolate starts melting, add some more double cream and mix until it is all incorporated properly. Then, add some more and continue until you get a beautiful and shiny texture.

After the cake are set, cover it with The Chocolate Topping. Take a fork and make small waves on the top as per picture above. Let it set for a bit and cut until it will be completely cooled down. It goes easier. Enjoy the edges and serve the luxurious chocolate bars in small pieces. Happy Birthday!
