A splash of dark rum and vanilla extract
100 ml of olive oil
100 ml of lukewarm milk
250g of semi-coarse flour, sifted
2 teaspoons of baking powder without phosphate, sifted
2 tablespoons of cocoa powder, sifted
Around 700g of fresh plums, washed, cleaned and halved
3 tablespoons of cane sugar mixed with 2 teaspoons of ground cinnamon
Instructions
In a large mixing bowl whisk 5 eggs with caster sugar until fluffy and foamy for about 2-3 minutes on high speed.
Next, pour in the rum, vanilla extract, oil and milk. Stir in the flour with baking powder and whisk until smooth.
Divide the mixture into 2 parts. In 1 of the parts, put 2 tablespoons of cocoa powder and give it a good stir.
Afterwards, mold the dough into a large lightly greased baking tray of 25×40 cm. Mold it the way that you firstly pour in the bright mixture, then the cocoa mixture. By using a wooden spatula, spiral a marble effect on the surface of the cake.
Next is to gently place the halved plums and sprinkle them with cinnamon sugar.
Bake in the oven for about 25 minutes until baked through. Slice into heaven and enjoy the moment.
