I dare to call it pizza, even though it has a milk doughy base – Pizza Cake. This is incredible delicious and an easy dough to work with, even you freeze it first, as I did.
The Pizza Cake Recipe comes from my mom. She used to make it for us on Friday’s night. I remember eating it cold on Sunday mornings. It doesn’t taste like the Italian dough we are used to (and we all love it, of course). Perhaps, more like Pizza Hut base and still beautiful and tasty.

Shopping list
20g of fresh yeast
250ml of lukewarm milk
1 teaspoon of caster superfine sugar
500ml of semi coarse flour, sifted
A pinch of salt
2 whole eggs
175ml of good quality olive oil
Instructions
First, activate the yeast. Sprinkle it into a coffee mug filled with lukewarm milk.
Add 1 teaspoon of sugar and mix. Place in a warm place and let it sit for about 30 minutes until it rises and becomes bubbly.
Meanwhile, prepare the dough.
In a large mixing bowl place flour with a pinch of salt.
Stir in eggs and oil.
Once the yeast is ready, add it into the flour mix.
Next, start kneading the dough until it becomes a homogeneous bready texture. Add milk if necessary (maybe around half of the mug).
Now you can process the dough immediately or freeze it for some other day.
Before you freeze it, roll it out between two cling foil sheets into a desirable shape.
Roll it down with a cling foil and cover with some plastic bag. Freeze.
Once you unfreeze it, you just roll it out and work is done.
If you want to process the dough straight away, continue.
Preheat the oven to 200 degrees.
Sprinkle your baking tray with a drizzle of olive oil and place the dough in.
Cover with chopped tomatoes and season with favourite herbs and sea salt.
Add anything you have mood for.
I went for a tuna steak meat, sweet corn, onion, chili and creamy cheese.
Bake it in the oven for about 15 minutes until nicely crispy. Then sprinkle with some extra Mozzarella Cheese and let it melt in the oven for another 2 minutes. Done.
Makes 2 large pizzas.
