Another Curry Treat, so easy and delicious – Pork Loin with Stir Fry Rice with a little twist. Juicy curry is always a win. Let’s start!

Shopping list
Loin Curry:
2 knobs of butter
400g of Pork Loin, chopped in chunks
1 tablespoon of Soy Sauce
1 teaspoon of coriander, curry powder, lemongrass
2 handfuls of broccoli, washed, cleaned and chopped (heads only)
2 handfuls of celeriac, cleaned, washed and diced
1 medium carrot, cleaned, washed and diced
2 handfuls of Snap Peas
1 teaspoon of Massaman Curry Paste (optional)
1 cup of quality coconut milk
Sea salt and black pepper
Stir Fry Rice:
4 portions of good quality rice
1 litre of beef stock
1 star anise
1 medium shallot, peeled and finely chopped
1 teaspoon of curry powder
Olive oil
Instructions
Heat up the butter in a wok on high heat. Place the meat in and roast for about 4 minutes until nicely golden and brown all over.
Season with salt and pepper. Add spices: coriander, curry powder, lemongrass. Pour in Soy Sauce and let it work for about 2 minutes.
All vegetables in: broccoli, celeriac, carrot and Snap Peas. Season with salt and pepper. Stir in Massaman Curry Paste until incorporated nicely. Lower the heat to low.
Pour in the coconut milk and put the lid on.
Meanwhile, cook rice in a hot boiling beef stock with star anise until al dente.
Next, take out the rice and place the star anise into the curry mix.
Heat up 1 tablespoon of olive oil in a medium frying pan on high heat.
Add shallot and curry powder and braise for about 2 minutes.
Stir fry the rice for about 2 minutes. Done.
Serve warm with “kroepoek”.
