Refreshing Sardine Pasta – what else to add. I had a wake up call for Vitamin D. We all do sort of lack it, especially when sitting at work or when the long and dark winter period ends. One of the primal sources of Vitamin D is fish. The best is fresh salmon, however, sardines consist of high content as well. Even the canned ones! Always read what you buy and you cannot go wrong. This scrumptious recipe is incredibly easy and all done in 15 minutes. I prepared 2 versions for babies and adults. Buon Appetito!

Refreshing Sardine Pasta is suitable for kids from the age of 2.

Shopping List

Baby Fusilli:
2 baby portions of Fusilli pasta
A splash of good quality olive oil
1 large carrot, peeled, washed and finely chopped
1 small zucchini, cleaned, washed and finely chopped
1 sardine, canned in olive oil
2 cherry tomatoes, washed and finely chopped
1 teaspoon of tomato purée
Lemon juice and Parmesan Cheese to serve with

Spicy Sardines:
2 portion of Fusilli pasta
A splash of olive oil
1 large shallot, peeled and sliced
1 canned of good quality sardines in olive oil (spicy optional)
A splash of lemon juice
1 teaspoon of tomato purée
A splash of dry white wine
4 cherry tomatoes, diced
A pinch of cayenne pepper, black pepper and sea salt
A splash of double cream
Fresh parsley and Parmesan Cheese to finish

Instructions

First, cook the pasta in a large pot filled with salted hot boiling water.

Baby Fusilli

In a medium pan heat up a splash of olive oil on high heat.

Add the carrot, zucchini and sauté for about 2-3 minutes.

Stir in the sardine and tomatoes. Let it smell out and add tomato purée.

Pour in a splash of salted pasta water and mix until smooth. Then, add Fusilli and serve. Finish with squeezed lemon and Parmesan. Yummy!

Spicy Sardine Pasta

Heat up a splash of olive oil in a medium pan on high heat. Add the shallot and sauté until softens, for about 2 minutes.

Next, add sardines and lemon juice. Let it smell out and add tomato purée.

Pour in white wine. Reduce.

Stir in the fresh tomatoes and flavour up with cayenne pepper, black pepper and sea salt.

After 1 minute, smoothen the sauce with a splash of double cream. Taste.

Once the paste is cooked, add it with a bit of salted pasta water into the sauce. Mix.

Serve warm with fresh parsley, Parmesan Cheese and a glass of dry white wine.

Makes 2 baby serves and 2 adult serves of Sardine pasta.
