What more to add to it – beautiful and springish – Seasonal Radish Soup. It is very light, fulfilling and fresh. The combination of honey, bacon and radish is just awesome. I definitely recommend it, and I should have made more of it. Ideally served with fresh bread and a glass of white wine. Enjoy!

Shopping List
A bunch of radishes, cleaned, washed, sliced and diced
A knob of butter
Few slices of bacon, diced
1 medium shallot, peeled and finely chopped
A splash of olive oil
1 teaspoon of honey
2 medium potatoes, peeled, washed, grated and diced
A handful of fresh parsley, washed and hardly chopped
1 litre of good strong stock
½ cup of double cream
Sea salt, ground black pepper
