Very easy soup to make and still with a bit of twist in it. There is a load of vegetables, therefore, lots of vitamins, which is so crucial during these short winter days. The base consists of cooked chicken and winter vegetables. The taste is really flavoursome and elegant, what’s not to like – Smooth Chicken Soup.
Smooth Chicken Soup is suitable for kids from the age of 2. Skip the cream and salt and offer the mixed soup to your 1 year-old. Bon appetit!

200g of lean chicken breasts, cleaned in chunks
1 medium shallot, peeled and finely chopped
1 tablespoon of olive oil and butter
2 medium carrots, peeled, washed and diced
2 medium white carrots, peeled, washed and diced
A piece of celeriac and kohlrabi, peeled, washed and diced
1 teaspoon of Provencal herbs
A handful of fresh parsley, hardly chopped
Vegeta Spice Natur/sea salt
100ml of single cream
Instructions
In a medium deep pan cook chicken in hot boiling water until cooked on medium heat.
Meanwhile, heat the oil and saute the onion until golden. Add all vegetables (carrots, celeriac and kohlrabi) and a knob of butter. Stir occasionally and let it bake for about 3-4 minutes until softened.
After the chicken has been cooked enough, add the vegetable mixture into the chicken stock and flavour up with some Provencal herbs, parsley, Vegeta spice and taste. Put a lid on and let it simmer for 20 more minutes until all the veggies soften nicely.
Next, mix with a hand blender until ⅔ of its stage. I like it smooth with some pieces. In the finale, pour in the cream and just warm it up before serving. You can sprinkle it with a pinch of chili or fresh parsley. Yummy!
