Depending on ingredients you add into the basic cookie dough, it is suitable for kids 2 plus, because of a possible egg white intolerance. Offer those as a dessert with the afternoon milk, never as a substitution for breakfast or main course. Trust me on that, cookies are addictive as any other sweets, plus give your kids some extra hidden energy.
Total Time: 35 minutes
70g of cane sugar
A splash of vanilla extract
1 whole egg
150g of plain flour, sifted
A pinch of baking powder, sifted
Instructions
Whisk in the egg, firstly on low-speed until incorporated well, then, increase the speed to the highest. Continue whisking until the sugar is dissolved, for another 2-3 minutes.
Flour with baking powder in and whisk until homogeneous doughy texture. Done.
Double Chocolate Cookies
Chocolate cookies are must in my family. My dad is a huge lover, and now my daughter too. I am not into chocolate at all, but I love to please them, of course. And I must conclude, these ones are moist, not too sweet (because of a quality dark chocolate) and incredibly crunchy. Try them out for yourselves.
Stir into a basic cookie dough 25g of sifted cocoa powder. Next, add 70g of dark chocolate chunks (I used 70%). Mix gently with spatula.
Exotic Cookies with Pine Nuts and Dried Mango
Pine nuts have amazing aroma and taste. They work so well with dried fruits like mango. Almost Hawaiian feel, isn’t it. Vibrant, rich in taste and delicious!
You can, of course, substitute the pine nuts with macadamia, pistachios, almonds, etc. The same applies to fruits: well-known cranberries or apricots. I can imagine them especially tasty in combination of white chocolate chunks, but let’s go back to mine. Bake with me and do not forget to include your little ones.
Into a basic cookie dough add around 30g of pine nuts, just like that. Then, stir in the dried mango, finely chopped. Mix with spatula. Done.
Presentation
For 1 basic cookie dough, you need a large baking tray.
Now it is time to call your beloved. Take a tablespoon and spoon the cookie dough directly onto baking tray lined with some baking paper. Flatten it for a bit with your hands and bake in the oven for about 20 minutes until they get golden and baked through. You can really smell them. So yummy!
