Incredibly easy recipe for any fast week meal – Black Seafood Pasta, all done in 20 minutes. The only thing you need is a good quality pasta, delicious seafood mix and fresh herbs. You can also try the black pasta with shrimp as per my recipe Easy Shrimp Pasta.
Tastes beautifully with a glass of Chardonnay. Black Seafood Pasta gives you an amazing feeling of summer, Mediterranean cuisine and the smell of the sea, of course.

Total Time: 20 minutes

Shopping List

2 tablespoons of olive oil
1 teaspoon of chili flakes
2 cloves of garlic, crushed, peeled and finely chopped
300g seafood mix, pre-cooked or fresh (mussels, baby shrimps, calamari and squid)
1 cup of dry white wine
1 cup of good quality pressed tomatoes

1 handful of fresh basil and parsley
Parmesan Cheese to serve

2 portions of good quality black pasta
Sea Salt

Instructions

First, heat up 2 tablespoons of olive oil in a wok on high. Add chili and garlic. Simmer for about 1 minute, just to smell it out.
Seafood in, roast it for about 4-5 minutes until the shrimps get nicely curved. Take it out and set aside.
Pour in the white wine and reduce.
Next, add tomatoes, lower the heat to low and cover with a lid. Put the seafood back in 5 minutes before serving.

Meanwhile, cook the black pasta in salted hot water until al dente. When it is ready, gently stir the pasta into the sauce with 1 large spoon of salted pasta water. Finish with fresh basil, parsley and Parmesan Cheese. Serve with a glass of white wine.

Makes 2 serves.
