Can you feel the summer vibe? Every time I make this Easy Balkan Tzatziki Salad, I feel like it is 35 degrees out there. Turkey, Greece, Bulgaria, you name it. Cucumber, fresh dill, thick yoghurt and nuts are totally refreshing combination, super after the whole day on sun. I just love it. In Bulgaria, the salad is called Snezhanka (snow white) or its popular variation Tarator soup, which is more liquid, finished with olive oil and nuts. Yummy!
Easy Balkan Tzatziki Salad is suitable for kids from the age of 3, because of the presence of garlic and vinegar.
Total Time: 15 minutes
Shopping List
1 large salad cucumber, washed, cleaned and grated
2 cloves of garlic, crushed, peeled and finely chopped
A splash of vinegar and olive oil
1 tablespoon of fresh dill, washed and finely chopped
Sea salt, ground black pepper
Few tablespoons of Greek plain yoghurt

Instructions
First, grate the cucumber and press to remove the juice. Place the pulp into a serving bowl and add the rest of ingredients: garlic, vinegar, olive oil, dill, salt, pepper and yoghurt. Mix and taste.
Refrigerate for a couple of hours and serve with grilled meats, vegetables or fish, fresh bread and a glass of dry white wine. Enjoy!
