Easy Chicken Casserole

Incredibly easy week dinner! Marinate the wings, drumsticks or breasts up front and you always have the success guaranteed – Easy Chicken Casserole.

Everyone likes this beautiful simplicity, adults or kids. Get inspired with my favourite marinade.

Total Time: 55 minutes + a couple of hours for the marinade

Shopping list

500g of good quality chicken wings, washed and drained
300g of good quality chicken filet, washed, drained, cleaned and halved
2 red chillies, finely chopped
2 cloves of garlic, crushed, peeled and finely chopped
1 slice of turmeric, peeled and finely chopped
2 teaspoons of honey
2 tablespoons of Heinz Ketchup
1 tablespoon of Soy Sauce
2 splashes of olive oil
1 teaspoon of cayenne pepper
1 tablespoon of Provencal Herbs
Juice from ½ lemon
Sea salt and ground black pepper

Instructions

First, marinate the chicken. Place all chicken meat in a deep pan and add all ingredients (red chillies, garlic, turmeric, honey, Heinz Ketchup, Soy Sauce, olive oil, cayenne pepper, Provencal Herbs, lemon and season with good amount of salt and pepper). Mix well with a metal spoon. Put the lid on, and let it work for couple of hours or overnight in the fridge

Next day, preheat the oven to 180 degrees.

Take out the meat and bring it to a room temperature. Place all chicken meat in a medium baking tray, just like that.

Pour the rest of marinade all over the meat. Bake in the oven for 30 minutes.

Take the meat out, flip it over. Baste with the delicious sauce and continue baking for 20 more minutes (depending on size of the meat). For last 10 minutes, you can increase the temperature to 200 degrees. This way you get a beautiful crust. Done.

Serve with Warm Potato Salad or baked potatoes and splash of quality mayonnaise.
