A beautiful Latin delicacy served with hot chocolate. This is an ideal fix of any pastry lover – easy and impressive. I went for Easy Cinnamon Churros, accompanied by a stunning cardamom whiskey chocolate.

So yummy. Enjoy with your families on Sunday afternoons, after hard nights with friends or just like that, whenever you feel cold.

Shopping List

The Cinnamon Churros as per choux pastry listed in Famous Coffee Éclairs Recipe:
50g of butter
Pinch of sea salt
80g of plain flour, sifted
2 large eggs, lightly whisked
2 tablespoon of caster superfine sugar
1 teaspoon of ground cinnamon
Olive oil and lard to fry

The Hot Chocolate:
250ml of milk
A pinch of ground cardamom
125g of good quality dark chocolate (at least 60%)
1 tablespoon of chocolate pudding mix
A splash of whiskey
(Icing sugar to make it sweeter if you fancy)

Instructions

The Cinnamon Churros

Start with the choux pastry.
In a small metal pot pour in 125 ml of water. Add butter and a pinch of sea salt. Bring it to boil and stir in whole flour.

Take off the heat and mix until you get a homogenous paste, for about 1 minute.
Start whisking on lower speed and add eggs, few at a time.

Incorporate well and increase the heat. Continue until all is processed. Eventually, you should have a shiny and smooth texture, easy to work with.

Fill up a decorating bag with a star nozzle and set aside.

Heat up the oil and lard in a deep frying pan.
Once the fat is hot, gently pipe shorter or longer shapes directly into the pan. Be careful.
Deep-fry until nicely golden, for about 2 minutes. Transfer them on a kitchen towel to absorb the extra fat.
Sprinkle with cinnamon sugar. Done.

The Hot Chocolate

Cinnamon Churros

Warm up the milk in a small deep pan. Flavour up with the cardamom and add the chocolate.
Stir on medium heat until you get a beautiful smooth texture, for about 3 minutes on medium heat.

Once it is smooth, taste. If you like it sweet, flavour up with some icing sugar.
Next, pudding mix in. Mix until it starts thickening. It should not be too thick, nor too liquid.
Take off the heat and pour in splash of whiskey. Let it smell out and mold it into mugs.

Serve warm with delicious churros.

Makes 4 serves.
