Easy Reuben Style Brunch is a combination of pastrami, lovely dressing, cabbage and cheese. It will make your day happier, trust me.
The better the meat, the more luxurious taste it will be. Ideal for an easy brunch or lunch. You can even serve it as a canapé on a small piece of bread. Cheers!

Total Time: 25 minutes

Shopping list

100g of quality pastrami (beef ham optional)
3 handfuls of Sauerkraut, drained
3 handfuls of full-flavoured cheese as Cheddar, Gruyère or Old Amsterdam, grated (I used Aged Gouda Cheese)
3-4 slices of fresh bread

The Dressing:
4 tablespoons of mayonnaise
2 tablespoon of Heinz Ketchup
2 teaspoons of Dijon Mustard
3 small cornichons, finely chopped

Instructions

Preheat the oven to 180 degrees.

In a small mixing bowl place all ingredients for dressing (mayonnaise, ketchup, mustard and cornichons) and mix well.

Place slices of bread on a baking tray lined with some baking paper. Put 1,5 tablespoon of The Dressing on the top of each bread. Layer with pastrami, cabbage and cheese.

Bake in the oven for about 10-15 minutes until nicely golden. Serve warm with a glass of beer.

Makes 3 serves.
