Incredibly easy, fresh and so so yummy – Easy Toasts with Goat Cheese and Figs. Figs are really one of my favourites. To be honest I eat them fresh as I am not such a big fan of sweet marmalades or compotes. However, there are so many variations how to process them and consume, even dried ones.
There is a small region on the coast line in Bulgaria called Sozopol, where the best fig jam and compote is being produced. It is a local delicacy, and let me tell you, I will not say NO to that.

My small daughter cannot stop eating those goodies just like that. However, if you want to impress your friends with a small bite, this is definitely a way to go. Get inspired and snack with me!

Total Time: 20 minutes

Shopping List

4 large toast breads
3 ripe figs, washed and sliced
100g of good quality goat cheese (I used semi-soft)
1 teaspoon of Dijon Mustard
1 tablespoon of honey
Splash of juice from lemon
Olive oil and ground black pepper to finish

Instructions

Preheat the oven to 200 degrees.

First, prepare the dressing. In a small bowl place the mustard, honey and lemon juice. Mix until it becomes a smooth and homogenous texture.

Sprinkle each toast with a tablespoon of the dressing and start layering. Goat cheese and figs on the top. Finish with some olive oil and black pepper.

Bake in the oven for about 5-10 minutes until the figs become juicier and the goat cheese is starting to melt.

Cut the toasts in halves and serve them with a glass of dry white wine.

Makes 4 large toasts.
