Nothing for the discovery channel, but amazing fresh and summerish flavour – New Wild Garlic Pesto. This is exactly how I like to “cook” through my spring and summer. Freshness, green products and vibrant flavours. Very colourful and tasty! Enjoy!
Honestly I prefer my basic wild garlic pesto just with a pinch sea salt and olive oil. However, I must admit, this one is more luxurious and representative for others: wild garlic, walnuts, Parmesan cheese, lemon and some easy seasoning. So yummy!

Shopping List
50g of walnuts
30g of Parmesan cheese, grated
A splash of lemon juice
Sea salt, ground black pepper
60ml of good quality olive oil
Instructions
Place all the ingredients into a blender: wild garlic, walnuts, Parmesan and lemon. Season with a bit of sea salt, ground black pepper and start pouring the oil.
Blend until you get it smooth and taste. If more seasoning needed, add more salt or lemon. Continue with oil and blend until perfection. I don’t mind a few pieces, so I don’t blend until very smooth.
Serve the Wild Garlic Pesto with fresh pasta, egg noodles, cherry tomatoes or mince meat. No limits to imagination. For more wild garlic ideas, click here. Bon appetit!
