One Healthy Barbecue Meal

Following up my summer menu, today I decided to combine beautiful and tasty food with a healthy nutrition. I prepared turmeric chicken skewers, seasonal veggies with tofu, mix of sexy baked potatoes and a light fruity cream. One Healthy Barbecue Meal – let’s begin.

One Healthy Barbecue Meal is suitable for kids 3 plus. The combination of olive oil, herbs, spices and just a pinch of sea salt is very safe. All listed veggies, meat and potatoes are ideal for kids. The only warning is for the cayenne pepper.
The cream satisfies the little ones as it is full of flavours and sweetness, which they will surely like. It is extremely easy and, of course, a home production. Bravo!

Total Time: 1 hour + some hours for the marinade and desserts to chill

Shopping List

Mango-Berry Cream:
250g of soft curd
250g of sour cream
3+1 tablespoons of honey
300g of berry fruits (I used strawberries, raspberries and blackberries)
1 ripe mango, washed and peeled
Almond Flakes to sprinkle with

Turmeric Chicken Skewers:
A splash of Soy Sauce and olive oil
1 teaspoon of turmeric (fresh even better), Provencal Herbs, satureja
½ teaspoon of cayenne pepper
Juice from ½ lemon
1 tablespoon of honey
2 cloves of garlic, crushed, peeled and finely chopped
300g of good quality chicken filet, cleaned, drained and cut in chunks

Veggie-Tofu Skewers:
150g of good tofu, drained and diced
2 slices of winter squash, washed, peeled and diced
1 medium zucchini, washed, cleaned and sliced
1 sweet red or yellow paprika, washed, cleaned and diced
2 medium shallots, peeled and diced
A splash of olive oil and Soy Sauce
A pinch of cayenne pepper
1 teaspoon of Provencal Herbs and satureja

Baked Parmesan Potatoes:
1 kg of good salad potatoes, peeled and diced
2 large sweet potatoes, peeled and diced
Olive oil
A pinch of sea salt and cayenne pepper
½ teaspoon of turmeric, satureja and Provencal Herbs
A handful of Parmesan Cheese, grated

Instructions

Mango-Berry Curd

First, prepare the desserts, so they have time to rest in the fridge.
Easen the curd and sour cream in a small metal bowl and flavour it with 3 tablespoons of honey. Whisk until it becomes a creamy texture, for about 1 minute.

Then, divide the cream into 2 equal parts and in one of them stir in a handful of strawberries. Blend with a mixer into a smooth texture. Taste.

Place the mango pieces with 1 tablespoon of honey in a hand blender and mix. Taste.

Start layering the desserts: ½ of the cup fill with the strawberry cream, berries on top, cover with a white cream and top it up with the mango. Sprinkle with almonds and refrigerate until serving. Done.

Turmeric Chicken Skewers

In a medium metal bowl put olive oil, Soy Sauce, turmeric, Provencal Herbs, satureja, cayenne pepper, lemon, honey and garlic. Mix it all with a balloon whisk and taste.
Chicken in. Stir with a spoon and prepare the skewers.

Place them onto a working board and cover with a cling foil. Refrigerate until grilling, so the marinade nicely works within.

Veggie-Tofu Skewers

Prepare the tofu and all the veggies (winter squash, zucchini, paprika, shallot).

Next, the marinade. In a wide mixing bowl place oil, Soy Sauce, a pinch of cayenne pepper, Provencal Herbs, basil and satureja. Mix.

Gently stir in all the veggies and tofu. Stick it all on the skewers and refrigerate until grilling. You can also place them onto a working board and cover them with cling foil.

Baked Parmesan Potatoes

The only thing you can prepare ahead is to chop clean potatoes and cover them with cold water in a large bowl. Leave them in room temperature.
This way they won’t get brown and your job is almost done.

Presentation

Preheat the oven to 200 degrees.

Heat up the grill and place the skewers on it. Chicken doesn’t need a lot of time, around 10-15 minutes, depending on your grill.
Veggies and tofu should be soft inside, crunchy on top and beautifully baked through. It takes around 30 minutes on medium degree.

Meanwhile, all is getting done, finish the potatoes.
Drain them well in a clean table cloth. Throw them onto a large baking tray and sprinkle with oil. Flavour it up with sea salt, cayenne pepper, ½ teaspoon of turmeric, satureja and Provencal Herbs. Mix them with your hands and grate Parmesan all over.

Bake in the oven for about 30 minutes, depending on the size of the potatoes, until they are nicely done.

The skewers are delicious just like that, but you can serve them with a lovely dip: ½ cup of crème fraîche, ½ cup of plain yogurt, a splash of lemon juice and 1 handful of chopped fresh chives. Potatoes are devine with my homemade ljutenica. Have a blast.
