I’ve already provided you with my scrumptious and incredibly Easy Tomato Soup Recipe. However, if there is tomato harvest, you must try the real deal – Real Tomato Soup.

There is only 1 good rule: the sweeter the tomatoes are, the better. In my case, I used a couple of different sorts of cherry and normal sized tomatoes. They were so lovely that I didn’t have to add any additional sugar to it. Awesome, isn’t it!

The Real Tomato Soup is suitable for kids from age of 1. Ease on herbs and spiciness, but this is a real winner.

Total Time: 45 minutes

Shopping List

1kg of fresh tomatoes, washed
1 large onion, peeled and finely chopped
2 cloves of garlic, crushed, peeled and finely chopped
A splash of good olive oil
3 heaped tablespoons of tomato purée
2 teaspoons of Vegeta Spice Natur
A pinch of cayenne pepper
A handful of fresh basil, washed, chopped
Parmesan cheese to serve with

Instructions

First, place all the tomatoes in a large deep pan casserole filled with hot boiling water on high heat.
Cook around 3 minutes until the skins break open. Then, blanch the tomatoes under cold water, so you stop the cooking process.

Peel and chop. Save all the tomato juice and place into a medium bowl with all the insides from tomatoes.

Next, a splash of olive oil into a medium deep pan. Onion in. Sauté for about 2 minutes on high heat until you have it golden, then, smell out the garlic for a couple of seconds.

Stir in the tomatoes with the juice and season with Vegeta and a pinch of cayenne pepper.
Add few water and reduce. Let it simmer on medium heat for about 10 minutes until the taste comes within.

You can blend it with a hand blend. I like the pieces, therefore, I mashed it with a potato masher. Taste and season accordingly.

Take off the heat and finish your Real Tomato Soup with fresh basil. Serve immediately with grated Parmesan cheese.

Makes 5 serves.
