Wonderful sweet yeast dough, filled with flavoured creamy quark and my favourite plum marmalade – Sweet Morning Treats. The great thing about these Morning Treats is that you can refrigerate or freeze it up front and finish just before serving. This way you have these treats beautifully fresh and warm any time you have mood for them.
Remember to always refrigerate the dough right after the kneading and before rising. Double wrap it in a cling foil and continue within 24 hours. You can also freeze individual filled tarts. When the time comes, take them out of the freezer and bake in the preheated oven, the same way you do with the frozen bought-in cakes. Easy and so delicious!
Sweet Yeast Morning Treats are suitable for kids from the age of 2, because of a possible egg white intolerance. If you skip the whole egg in quark, you can serve them to kids from the age of 1.
Total Time: 45 minutes of preparation + 1,5 hour rising The Dough + 1 hour baking (30 minutes per 1 tray)

The Sweet Yeast Dough:
20g of fresh yeast
150ml of lukewarm milk
1 teaspoon of caster sugar
450g of semi-coarse flour, sifted
A pinch of sea salt
60g of caster superfine sugar
2 egg yolks, lightly whisked
90g of butter, meltedThe Filling:
200g of soft low-fat quark
30g of icing sugar, sifted
1/2 package of vanilla sugar
1 whole egg
1 tablespoon of fresh lemon zest
1 small jar of good plum marmalade
1 egg yolk for brushing
Instructions
The Sweet Yeast Dough
Sprinkle the yeast in a coffee mug filled with lukewarm milk. Add 1 teaspoon of caster sugar and mix. Let it work for about 10 minutes until it bubbles a bit.
Meanwhile, in a large mixing bowl place flour, salt and sugar. Mix and create a well in the middle.
2 egg yolks in. Add the yeast with a bit of milk. Start kneading it into an elastic and non sticking Dough from outside to inside.
Pour in the butter and add milk accordingly. Once The Dough is ready, sprinkle with some flour, cover with a clean cloth and let it rise in a warm place for about 1.5 hour.
The Morning Treats Filling
In a medium bowl place quark, sugars and lemon zest. Mix and taste.
Stir in the egg and whisk on medium speed until fluffy for about 1-2 minutes. Set aside.
Preheat the oven to 180 degrees.
Presentation
Once The Dough has doubled its size, mold it into a sifted working board. Roll it out with a roller into a rectangular shape.
Cut into 20 squares.
Brush the edges of each square with the egg yolk dissolved in a bit of water.
In the middle of each square place 1 heaped teaspoon of quark and 1 teaspoon of marmalade on top of it.
Close the squares diagonally or create small bowls from them (closed partly). This way The Filling will spread all over the top nicely.
Brush with the rest of the egg yolk and bake in a tray lined with some baking paper for about 30 minutes until golden and baked through.
Let the Sweet Morning Treats cool down for a bit and serve with a coffee or tea. Yummies!
