Everyday recipe, let me tell you! Yummy as for kids as for adults. It is always more tender and tastier to marinate the meat up front. However, if you don’t have time, no biggy. It will still taste delicious – Easy All Season Chicken.

My Easy All Season Chicken is suitable for kids from the age of 3. It is very juicy and fulfilling, so you can serve it with fries, rice, tortillas, cooked potatoes or potato mash. No limits to imagination! The more veggies, the better!

Total Time: 30 minutes + few hours for the chicken marinade

Shopping List

500g of good quality chicken filets, washed, cleaned and sliced
Olive oil
A splash of Soy Sauce
1 teaspoon of smoked sweet paprika, Garam masala, Provencal herbs and satureja
A splash of ketchup and mustard
1 large shallot, peeled and finely chopped
1 sweet red pepper, washed, cleaned and diced
2 medium carrots, peeled, washed and diced
1 handful of sweet corn and broccoli, rinsed
100g of champignons, peeled and sliced
A pinch of black pepper, 1 teaspoon of smoked sweet paprika
Sea salt
1 teaspoon of tomato purée
100g of good quality Feta cheese



Instructions

First, marinate the meat. In a medium metal bowl place a splash of olive oil, Soy sauce, smoked paprika, Garam masala, Provencal herbs and satureja.

Add a splash of ketchup, mustard and mix with a balloon whisk until you get a homogenous texture.

Cover with a lid and let it work for a couple of hours.

Next, heat up a splash of olive oil on high heat and stir in the meat. Roast until it becomes nicely golden for about 2-3 minutes.

Afterwards, add onion, pepper, carrots, corn and broccoli. Sauté for about 2-3 more minutes until nicely golden. You can add a splash of Soy sauce for better result.

Stir in the mushrooms and lightly season with black pepper. Let it sauté for 1 more minute and add a pinch of sea salt, so the mushrooms release their juice.

In the finale, add 1 teaspoon of tomato purée, a splash of ketchup and mustard. Let it smell out and baste with a bit of hot boiling water.

Lower the heat and cover with a lid. Let it simmer until you make a side dish.

At the end, sprinkle with Feta and let it melt for 2 more minutes. Serve warm with a glass of dry white wine. Cheers!
