Another scrumptious American production, so called mac and cheese. Notably American president Thomas Jefferson brought pasta back to Virginia on his way from Italy. There are many disputes how this creamy dish has been discovered. However, the result is the same among all the generations – fulfilling, easy and Cheesy Pasta.

Macaroni and cheese consist of 2 main ingredients as per its name. However, the type is up to your preference: pasta and cheese. In my version I went for my favourite Farfalle Pasta shape and matured Gouda Cheese. You can use any kind of hard cheese of your liking that melts well: Cheddar, Parmesan, Pecorino, Old Amsterdam, Edam, Kashkaval, etc. Add a little bit of spice and serve with seasoned green salad. Nothing else, nothing more. Perfection!

Cheesy Pasta is suitable for kids from the age of 2. Easy on spice, offer a smaller portion on lunch or dinner and enjoy!

Total Time: 15 minutes

Shopping List

The Pasta:
2 portions of Farfalle pasta/macaroni
400ml of milk
A pinch of sea salt, ground black pepper, nutmeg and cayenne pepper
100g of matured Gouda Cheese/Cheddar

The Salad:
4 handfuls of Rocket Salad, washed and drained
A pinch of Kosher salt and ground black pepper
A splash of Balsamic Vinegar and good quality olive oil

Instructions

Preheat the oven to 200 degrees.

The Pasta

Heat up the milk in a medium ovenproof non sticking casserole to a boiling point.

Next, add pasta, salt, peppers and nutmeg.

Cook for about 8 minutes, depending on the type of your pasta, up to 1 minute before al dente!

Then, take off the heat and stir in the cheese. Add pinch of cayenne pepper on top and bake in the oven for about 2 more minutes until it thickens nicely.

The Salad

Meanwhile the pasta is cooking, prepare the salad. Season with salt and pepper, flavour up with a splash of vinegar and olive oil. Mix and taste. Set aside.

Once the pasta is ready, serve the cheesy pasta immediately with a glass of full-flavoured red wine and Rocket Salad on side. Bon appetit!
