Easy Veggie Spaghetti

Easy Veggie Spaghetti is another fast week dinner recipe, even just for yourself. The combination of tomatoes, lemon grass, spinach and feta brings spaghetti to a completely different level. Enjoy Easy Veggie Spaghetti with a glass of white wine!

Shopping List

2 portions of Spaghetti
Sea salt

1 medium shallot or spring onion, cleaned and finely chopped
1 clove of garlic, crushed and finely chopped
1 teaspoon of cayenne pepper
2 medium tomatoes, chopped
100ml of dry white wine
dried Provencal herbs
1 teaspoon of lemon grass
3 handfuls of fresh spinach, washed and cleaned
2 splashes of juice from lemon
2 handfuls of white Feta cheese
Ground black pepper and sea salt
Olive oil
A knob of butter

Shopping List

In a large deep pot cook spaghetti in salted hot boiling water until al dente.

Meanwhile, heat up a knob of butter and a splash of olive oil in a wok.
Add onion. Sauté for a couple of minutes until it softens. Add garlic and cayenne pepper and let the aroma come through (takes about 1 minute).

Stir in tomatoes and wine. Reduce.

Season with sea salt, pepper, Provencal herbs and lemon grass. Cook for 2-3 more minutes.

Next, add the spinach and cook for another 2-3 minutes until it is wilted out and darkened. Take off the heat.

Drain out the spaghetti and add it into the mix with 1 large spoon of the salted pasta water. Mix well.
Sprinkle with lemon juice and finish with a good amount of feta cheese . Bon appetite!

Makes 2 serves.
