To finish my beautiful Valentine’s Menu, I present you a kind of chocolate mousse – Lovely Chocolate Dot. Even though it is eggless, the texture is really yummy and smooth.
The secret is to have good products. The chocolate and whipped cream give the dessert a fluffiness similar to egg whites. Of course, you can make it without alcohol or flavour it up with Baileys or Amaretto, for instance. The success is guaranteed.

Shopping list
50ml + 250ml of double cream
3 splashes of quality dark rum
1 tablespoon of icing sugar, sifted
Cocoa powder and orange zest to decorate
Instructions
Mix constantly with a spatula and smoothen the texture by adding double cream (50ml), few at a time for about 4-5 times. This way you get a beautiful shiny texture. Continue until all the chocolate is melted.
Take it off the heat and pour in 3 splashes of rum. Stir and let it rest in a cold place for about 20 minutes.
Next, whip the rest of the double cream (250ml) up to two-thirds of its stage. Meaning that it becomes thick, but not into peaks.
Next, stir in the icing sugar to flavour it up.
Take a balloon whisk and pour in the chocolate mixture, half at a time. Twist and turn over.
Once you get a smooth texture, fill up a frosting bag and spiral the mix into serving glasses.
Let the glasses cool down in a cold place for couple of hours.
Just before serving sprinkle with some orange zest or cocoa powder. Stunning!
