Lovely Peach Sorbet

This is really a sexy treat, let me tell you. Incredibly tasty and full of summer flavours. Let’s call it a guilty pleasure, a late summer special – Lovely Peach Sorbet.
My little one would like to have a big bite of it, however, I recommend this dessert for kids 3+ because of the amount of double cream and crème fraîche.

Shopping List

5 ripe peaches, washed, peeled and blended up to your liking
150 of a double cream, whipped into peaks
2 tablespoons of crème fraîche
1 teaspoon of good quality vanilla extract
3 tablespoons of honey
1 tablespoon of vanilla sugar

Instructions

First, prepare the peaches in a blender. Add few spoons of honey and blend it into a desirable texture. I like to taste some pulp within. Others like it more like a paste. Continue and taste.

Next, place a double cream into a hand blender. Add 1 tablespoon of vanilla sugar and whip it until two-thirds of its stage. Then stir in the crème fraîche, peaches and vanilla extract.
Blend until it becomes a beautiful smooth texture, for about 15 seconds. Done.

Mold the mix into the plastic box and place it in the freezer. Give it a good stir after 1 hour, and then again, 1 hour later. This way you get a nice and smooth texture, which is easy to work with. After 3-4 hours it should be ready to taste. Take it out of the freezer and let it ease for about 10 minutes. By using an ice cream spoon you can easily make and place the balls into a waffle cone. Yummy!
