Rich Surimi Salad

Maybe you belong to such cocky foodies as myself. For me personally, surimi is a lame imitation of good quality crab meat and you can find it in so many places. My personal irritation rises when seafood pasta in Italian restaurants consists of surimi sticks. However, the sticks themselves may differ a lot. That’s why I recommend you to look at the content. In countries where I live, the real stuff of a delicious crab meat, is less than affordable. Therefore, today I downgrade myself to a luxurious snack – Rich Surimi Salad.

This salad can be served as an easy lunch or a side dish to Fish and Chips, chicken drumsticks or wings. In my family it has always been served as Sunday’s appetizer. Enjoy!

Shopping List

250g of good quality surimi (fresh or frozen), finely chopped
3 medium tomatoes, washed and diced
1 small cup of corn or peas (fresh or canned – rinsed)
50g of matured cheese (Cheddar, Old Amsterdam, Gouda, etc.)
½ cup of plain yogurt
½ cup of good quality mayonnaise
1 handful of fresh basil, washed and finely chopped
Sea salt and black pepper

Fresh bread to serve with

Instructions

Place all the ingredients (surimi, tomatoes, corn/peas, cheese, yogurt, mayonnaise and basil) into a medium serving bowl.

Season it with salt and pepper and taste. The texture should be rather creamy. Refrigerate well before serving.

Makes 6 serves.
