This recipe is becoming a must for gathering with my brother – Sausages with a caramelized onion and blue cheese dressing. It is an easy and fancy version to the classics from Germany. Incredibly good and satisfying dish. Enjoy!

8 Bavaria white sausages (2 per 1 bun)
4 bread buns of your liking, halved
3 big onions, peeled and hardly chopped
1 cup of a stout
1 knob of butter
3 tablespoons of cane sugar
2 tablespoons of balsamic vinegar
70g of a blue cheese
100g of mayonnaise
100g of sour cream (or greek white yoghurt)
spring onion or fresh chives to finish, finely chopped

Instructions
Heat up 2 tablespoons of olive oil in a frying pan on medium heat. Add the onions and put the lid on for about 10 minutes. Then, remove the lid and cook them slowly until they are nicely soft (takes about 30 more minutes).
Pour in the beer and reduce. Add knob of butter, cane sugar, vinegar and mix. Bake 5 minutes longer until it is becomes sticky and thickens. Season with salt and taste.
Bake the sausages in a pan, oven or grill. Just before serving, bake the bread for a bit, so it gets nicely golden and crunchy.
Meanwhile, prepare the dressing by mixing all ingredients well together (cheese, mayonnaise and sour cream).
Serve the sausages on crispy bread buns with a blue cheese dressing and onion spread. Sprinkle with spring onion or chives. Guten Appetit!
