I randomly found this beauty on one of my favourite culinary websites and I needed to try it asap. Since then I’ve made it a couple of times, and let me tell you, it wasn’t a long time ago – Scrumptious Onion Dip.
Total Time: 20 minutes + few hours of chilling in the fridge
Shopping List
2 stalks of spring onion or 1 large white onion, cleaned, washed and finely chopped
1 teaspoon of sea salt
1 clove of garlic, crushed, peeled and finely chopped
2 splashes of Worcestershire sauce
1 cup of sour cream
⅓ cup of good mayonnaise
A pinch of ground black and cayenne pepper
60g of blue cheese, in pieces
Nachos, chips or fresh baguette to serve it with
Instructions
First, add a splash of olive oil into a small frying pan and sauté the onion for a bit on medium heat. Season with salt and continue until the onion gets golden and softens. Then, add garlic, just to smell it out.
Take off the heat, sprinkle the onion and garlic with Worcestershire sauce, mix and let it cool down.
Meanwhile place all remaining ingredients into a blender: sour cream, mayo, pepper and cheese. Blend until smooth and mold into a serving bowl.
Stir in the chilled onion plus garlic.
Cover the onion dip with some cling film and refrigerate until serving. Once served you will have a great dip for any kind of barbecue, Nacho’s evening or a heavenly plated snack event!
Makes 1 large serving bowl.
