This recipe is really one of the comfort food meals that noone can deny, perhaps the vegetarians. However, the veggie sauce is so flavoursome that it tastes good even by itself with potato mash. For the meat lovers, buy a good quality inexpensive roast and you cannot go wrong here. Shopping List

700g of good quality beef shank, washed and drained
3-4 medium carrots, peeled, washed, diced and finely chopped
2 handfuls of bacon lardons
2 shallots, peeled and finely chopped
2 stalks of spring onion, cleaned, washed and finely chopped
2 slices of celeriac, finely chopped
2 medium white bell pepper, washed, cleaned and finely chopped
2 teaspoons of smoked sweet paprika
1 teaspoon of caster sugar
1 cup of a good tomato passata
A pinch of cayenne pepper
150g of chestnut mushrooms, cleaned and sliced
Bouquet garni: 6 black pepper, 4 allspice, 2 bay leaves, few branches of thyme and rosemary
1 teaspoon of a smoked sea salt
1/2 cup of double cream

Serve with Parmesan potato mash or Tagliatelle pasta

Instructions

Preheat the oven to 180 degrees.

Start with making holes into a piece of beef and place the diced carrots and bacon in there.

Add 1 tablespoon of lard/olive oil into a deep non sticking oven proof casserole pan and roast the meat from both sides nicely.

Next, take out the meat and set aside. Add a few more oil into the casserole and add the veggies: onions, carrots, celeriac and peppers. Stir in the bacon plus the smoked sweet paprika. Sauté until softens.

Then, add a pinch of sugar and let it caramelize for a bit. Then, stir in the tomatoes, a pinch of cayenne pepper, mushrooms and bouquet garni.

Season the meat with some smoking sea salt and place it gently in the middle. Baste with 1 cup of water and cover with a lid. Bake in the oven around 2-3 hours until the meat is very tender. Baste every now and then with the scrumptious sauce.

The next step is to take it out and cover with a sheet of aluminium foil.

Finish the sauce. Taste and season accordingly. If you fancy, blend it with a hand blender. The best is to smoothen with 1/2 cup of double cream and taste. Serve the Tomato Veggie Sauce with a Tender Smoked Beef Roast on a plate with potato mash and slice the wonderful beef. Happy Easter holidays!
