Easy, fresh and summerish – Sexy Chocolate and Blueberry Slice. This recipe comes from a summer issue of one of the local magazines Kochen & Küche, and it is indeed perfect for the summer months.

The chocolate pudding powder mix gives it a little twist, especially for the fluffiness of the whole slice. Freshness comes from the scrumptious combination of blueberries and crème fraîche – not too sweet, but still very satisfying. Moreover, it is really easy to make. So impress your beloved and bake with me!

Chocolate and Blueberry Slice is suitable for kids 2+ because of a possible egg white intolerance. It makes a perfect dessert as well because it is very moist and not extremely sweet.

Shopping List

The Dough:
120ml of milk
150g of chocolate (at least 50%)
250g of butter, soft in cubes
250g caster superfine sugar
4 whole eggs
200g of plain flour, sifted
1 teaspoon of baking powder, sifted
1 tablespoon of good quality chocolate pudding mix

The Topping:
175g of plain flour, sifted
100g of caster superfine sugar (combined with vanilla sugar)
100g of cold butter, in cubes

The Filling:
250g of crème fraîche
400g of fresh blueberries (frozen rinsed and drained optional)

Instructions

The Dough

First, in a small deep pan place the milk and chocolate. Heat it up on medium heat and mix until it becomes shiny and a smooth texture, takes around 5 minutes. Take off the heat and set aside.

Preheat the oven to 160 degrees.

In a large mixing bowl place butter and sugar and whisk until it gets white and foamy, for about 2 minutes on high-speed.

Next, start adding the eggs, one at a time. Always whisk on a low-speed until the egg is incorporated. Then, increase the speed to the highest. In the finale, the texture gets very smooth and creamy.

In another medium bowl put flour with baking powder, pudding mix and stir. Then, throw the 2 parts into one wet mix. Mold and turn over with spatula. This way you avoid lumps and it stays nicely fluffy.

Pour in the chocolate and give it a good stir.

Mold the mixture into a medium baking tray (I used 25x35cm) lined with some baking paper. Beat it against the table and bake in the oven for about 25 minutes until nicely crusty and baked through. Trust me, you are gonna feel the smell when ready.

Once the base is done, take it out and let it cool down a bit.

The Topping

Meanwhile, in a medium mixing bowl place flour, sugar and butter. Knead with your hands or a mixer until it is a homogeneous crumby texture. It may seem to be a lot, but it is truly delicious, so why not. That’s a real treat!

Presentation

Layer the base with crème fraîche and smoothen with a palette knife.

Next, sprinkle with blueberries and spread The Topping over them. Yummy and yummy.

Bake in the oven for 15 more minutes until beautifully golden on top. Take it out and let it cool down before serving. Slice into heaven and enjoy with a cup of coffee or tea.

Makes 1 medium baking tray of 25x35cm.
