Spring Pea Soup with Salmon

Inspired by the Czech magazine Apetit, I present you Spring Pea Soup with Salmon. It really cannot get more springish than this. I love the combination of the creamy peas and the whole peas. This soup is very refreshing, delicious, rich in flavour and incredibly beautiful. Serve with a piece of fresh bread and enjoy it as much as I did.

Total Time: 30 minutes

Shopping List

A splash of olive oil
1 large onion, peeled and finely chopped
500g of peas (fresh or frozen)
1 litre of a good stock
Sea salt and ground black pepper
1 small plant of basil (4 handfuls), washed
200ml of crème fraîche
Juice from ½ lemon
200g of smoked salmon, torn in pieces
Bread to serve

Instructions

Heat up a splash of olive oil in a deep non sticking pot on medium heat.
Add onion and sauté for about 5 minutes until it softens.
Next, stir in the peas. Sauté for another 4 minutes.

Pour in hot boiling stock and taste. Season accordingly with sea salt and pepper.
Transfer about ½ soup into a small pot. Add basil, crème fraîche and lemon juice.
Mix with a hand blender until smooth. Taste.

Mold the mixture back into the soup and cook for 5 more minutes, so all the flavours come out.
Serve warm with the smoked salmon. Be generous, leave the salmon for about 2 minutes in the soup and eat. Yummy and yummy.
