Springish Green Asparagus Quiche

Asparagus is one of my top spring vegetables that I am desperately searching for every spring. In countries I live in, it is very seasonal, therefore, there is limited time to enjoy it. I always gotta do the most of it – Springish Green Asparagus Quiche.

This year I decided to make an easy quiche. Lovely for any gathering with your beloved, easy lunch, dinner or brunch. And let me tell you, kids love it too, just do not specify what it’s all in it.

My Springish Green Asparagus Quiche is suitable for kids from the age of 2, because of a possible egg white intolerance. Offer with an easy salad on side. Scrumptious!

Shopping List

The Base as per in my Creamy Zucchini Quiche Recipe:
220g of plain flour, sifted
A pinch of sea salt
120g of cold butter, in cubes
4 tablespoons of cold water

The Filling:
1 small bunch of fresh radish, cleaned, washed and sliced
2 handfuls of good quality bacon, finely chopped
Olive oil
250g of green asparagus, cleaned and washed
3 whole eggs
150ml of double cream
2 tablespoons of Greek plain yoghurt
80g of matured Gouda cheese, grated

Easy Green Salad:
Olive oil
250g of green asparagus, cleaned and washed
8 small cherry tomatoes, washed and halved
Sea salt, a splash of lemon juice
Small cucumber, washed and sliced

Instructions

The Base

In a large mixing bowl place the flour with salt. Add the knobs of butter and crumble with hands.

Afterwards, start pouring cold water until you get a homogenous texture. Work fast so it doesn’t get too butterish. Wrap in a cling foil and refrigerate for about 30 minutes.

Preheat the oven to 180 degrees.

Roll out the dough and mold it into a greased fluted flan tin (I used 28cm pie form with a loose bottom). Smoothen the sides with your fingertips and poke well with a fork.

Bake in the oven for about 15 minutes until it gets firm. Then, take it out and let it cool down for a couple of minutes.

The Filling

Meanwhile the quiche is baking, add a splash of olive oil into a medium frying pan on medium heat.

Bacon in. Roast for about 2 minutes and stir in the radish and asparagus. Sprinkle with some more olive oil and roast it for a couple of minutes until you have it nicely golden. Done.

In a small bowl put eggs, double cream, yoghurt and Gouda. Mix with a balloon whisk.

Presentation

Put the slices of asparagus on side and place the radish with bacon around the edges of the quiche.

Next, mold The Filling on the top and smoothen.

Afterwards, gently place the slices of asparagus.

Bake in the oven for about 25 more minutes until baked through and golden on top.

Easy Green Salad

Just before the Green Asparagus Quiche is ready, add a splash of olive oil into the pan in which you’ve prepared The Filling.

Add the asparagus pieces and cherry tomatoes. Sprinkle with sea salt and sautée for about 2-3 minutes until you have it nicely darkened. Add lemon juice and reduce. Serve with fresh cucumbers or spinach of side, the fresher, the better. So yummy!

Once the Green Asparagus Quiche is done, slice into heaven and serve immediately with some greens on side. Cheers!
