Total Time: 40 minutes

Shopping List

400g of top quality duck filet with the skin, cleaned and drained
2 teaspoons of Five-spice powder
1 teaspoon of sea salt

2 cloves of garlic, crushed, peeled and finely chopped
2 tablespoons of sesame seeds
2 handfuls of green beans, cleaned and washed
1 package of bean sprouts (fresh or jarred)
150g of mushrooms, cleaned and sliced
1 splash of Soy Sauce
2 splashes of Oyster Sauce
1 teaspoon of Thai Massaman Curry Paste(optional)

4 portions of good quality egg noodles
Juice from ½ lemon

Instructions

First, prepare the meat as per in my recipe Duck Breasts 2 kinds.
Score the duck, season with 1 teaspoon of Five-spice and sea salt from both sides.
Duck, skin side-down in cold wok pan. Heat up to the highest and roast the duck for about 2 minutes from each side.

Then, lower the heat and skin side-down continue roasting for about 6-8 minutes, depending on the thickness of the filet. The touch should be gummy and tender.
Take off the heat and set aside for a while.

Meanwhile, cook the noodles in a deep pot of salted hot boiling water. Cook them little less time than it is listed in the instructions. Take them out and drizzle with little bit of a duck fat. Mix and set aside.

Heat up the wok pan with the remaining duck fat. Depends on the filet itself. Mine wasn’t too fat, so I had around 1 tablespoon of the fat in total.

Add garlic, 1 teaspoon of Five-spice and sesame seeds. Let it smell out, just for about 1 minute.
Next, stir fry the vegetables (green beans, bean sprouts and mushrooms). Pour in splash of Soy Sauce, 2 splashes of Oyster Sauce and finish with the Thai Massaman Curry Paste. Toss until the paste is processed well. This way you get a beautiful combination of hot and sweet. Taste and season accordingly.

Lower the heat, slice the duck filet and put it back into the pan. Simmer for about 5 more minutes and add egg noodles. Give it a good stir and sprinkle with lemon juice. Serve immediately. So yummy!

Makes 4 serves.
