These ribs are suitable for kids from the age of 3. As I am raising a little gourmand in here, I don’t have to tell you how much she loves this one. Bon appetit!
Total Time: 2 hours + 2 day chill for The Marinade
Shopping List
Around 2.5 kg of good quality pork ribs, cleaned
2 litres of cold water
100ml of vinegar
50g of sea salt
3 bay leaves
5g of allspice
1 large white onion
5 cloves of garlic, peeled
The Sweet Beer Marinade:
300g of Heinz Ketchup
1 teaspoon of instant decaf coffee
40g of garlic, crushed, peeled and finely chopped
100g of onion, peeled and finely chopped
100g of whole grain mustard
50g of caster sugar
100ml of good lager
1 teaspoon of sea salt
½ teaspoon of ground black pepper
Instructions
The Pork Ribs
Chop the ribs into 2-3 bone rib chops and gently place in a large deep casserole pan with all the ingredients: water, vinegar, salt, bay leaves, allspice, onion and garlic.
Bring it to boil, put a lid on and let it simmer on medium heat for about 1 hour until the ribs get softer, not all the way.
Take the ribs out and soak in the lovely marinade straight away.
The Sweet Beer Marinade
In a medium baking tray put ketchup, coffee, garlic, onion, mustard, sugar, beer, sea salt and black pepper. Mix well with a balloon whisk.
Next, stir in the ribs and rub them well. Let them cool down entirely. Then, cover with a cling foil and refrigerate for 2 days.
Afterwards, take them out, bring to a room temperature and grill for about 30 minutes on 180 degrees. Sweet Beer Pork Ribs done.
