I remember my mom used to buy it when I was younger. She’s always loved celeriac and I never understood why until I’ve grown older. The taste and brain changes, don’t they.
Celeriac is on the top of my veggie list. It is an extremely healthy vegetable, available throughout the whole year, even it is considered a winter vegetable. It does magic to stews, soups and meats, too.
Today, I present you the salad, which is embarrassingly easy and still very impressive. The secret is fresh celeriac and lemon. Serve cold with a roast, BBQ or just like that with some fresh bread. Yummy!
