Funky Fruity Popsicles

Refreshing, summerish and fun – Funky Fruity Popsicles. You can make it as a rainbow or pick the contrast colors. No limits to imagination. This one is going to make a star every summer day, trust me. To reveal a secret, sometimes I just sneak and take them for myself. Especially those with the melon.

Buy all seasonal goodies and process, freeze or eat them immediately. No waste!

Note that Funky Fruity Popsicles are suitable for babies 1+, depending on what fruits you use. Don’t let your baby eat too much of this, however, it can be very useful during the period of growing teeth.

Total Time: 25 minutes + few hours sit in the freezer

Shopping List

Tip number one:

Juice from 1 orange
1 banana, peeled
1 small bowl of dark fruits (fresh or frozen), I used blackberries, black currants and blueberries
1 small bowl of red fruits (fresh of frozen), I used raspberries and redcurrants

Tip number two:

8 small apricots, washed, peeled, cleaned and halved
1 banana
3 ripe kiwis, peeled and sliced
1 tablespoon of honey
2 slices of ripe honeydew

Tip number three:

3 medium nectarines, washed and diced
1 tablespoon of honey
1/2 cup plain yoghurt

Instructions

Tip number one

My tip is to use frozen fruits, at least for the bottom layers. This way you simplify your job incredibly. If you have fresh fruits only, you have to layer each part separately. Meaning, place the first layer and freeze to continue. Freeze partly only, so you can still place the stick of popsicle at the end.

This is how I do it.
Place black fruits in a blender with juice from ½ of orange. Blend until smooth. Put 1 teaspoon of the black mix into the popsicles.
Repeat the same with the red fruits. Depending on what fruits you have, use the orange juice.
I used only splash of it for red ones (as they were juicy enough). Place 1 teaspoon of each into popsicles.
In a hand blender mix the banana with splash of orange juice. Top the popsicles and place the sticks on them. Freeze them until serving. Done.

Makes 6 popsicles.

Tip number two

For this very combination it doesn’t matter if you have fresh or frozen parts of the fruits. I used fresh only.
First, prepare the top layer. Place all apricots and banana into a hand blender. Blend into a nice porridge texture and taste. I chose sweet banana in combination of sour sweet apricots. Therefore, no extras needed.
Spoon 2 tablespoons of the mix into your popsicle forms and continue.

Place in a hand blender kiwis with 1 tablespoon of honey. Blend to a smooth mixture and spoon onto apricot-banana mix.

Next, blend slices of melon and finish the popsicles with the juice from it. Place the sticks in and let it freeze for at least 3-4 hours. Done.

Makes 6 popsicles.

No rocket science there, always try to mix fresh fruits your local store offers at the time. Once I skipped the apricots and the banana. Therefore, I mixed 2 ripe kiwis, 1/2 small candaloupe and 1 tablespoon of honey. Delicious!

Tip number three

In a hand blend place nectarines and 1 tablespoon of honey. Blend until smooth and then, pour in 1/2 cup of yoghurt. Mix and taste.
Mold the mixture into 4 medium popsicle forms. Freeze for couple of hours and serve.
