A perfect recipe for everyone who likes pancakes with a twist – Cinnamon Flapjacks. The world’s classic, you can never go wrong. Enjoy them with your beloved at the lazy weekends.

I used buttermilk to give the batter smoother texture. You can spread it with whatever you have mood for: fruits, honey, nuts, sugar, chocolate, bacon, etc.

Note: that the batter itself isn’t that sweet. This one is my personal favourite. I just love the smell of cinnamon and nutmeg.

Note that pancakes are suitable for babies 2+ because of a possible egg white intolerance.

Total Time: 40 minutes

Shopping List

150g of plain flour, sifted
1 teaspoon of baking powder, sifted
½ teaspoon of soda bicarbonate
30g of icing sugar, sifted
1 tablespoon of ground cinnamon
A pinch of nutmeg
190ml of buttermilk
1 whole egg
25g of butter, melted

Instructions

In a large mixing bowl put in all dry ingredients (flour with baking powder, soda, sugar, cinnamon and a pinch of nutmeg). Mix well with a spatula.

In a small mixing bowl whisk the egg, buttermilk and butter until smooth texture.
Slowly mold it into the dry mixture.

Next, heat up a large non sticking frying pan on high heat.
Gently place 1 tablespoon of the batter into the pan. Depending on the size of your pan, I usually make 4-5 at the same time.

Bake until bubbles appear on the top. Then, flip over and continue until both sides are lightly golden.
